Ingredients
2 cups of aubergine pulp DIMITRA
10 Sun dried tomatoes DIMITRA
2 eggs
2 large onions
2 cups bread crumbs
100 g. Gruyere
olive oil for frying
Directions
- Grate the onions, the tomatoes and the cheese in the grater.
- Mix the aubergine pulp with the onion, cheese, eggs and the cake (not the whole cake at once. You may need it).
- Knead the mixture and shape meatballs.
- Fry them in hot olive oil.
- Enjoy!
