Incredible ” meatless” meatballs made with hearty eggplant, formed into these crazy good balls of delicious joy that you MUST try! Perfect for spaghetti and meatball dinners!

Ingredients

  • 2 cups of aubergine pulp DIMITRA

  • 10 Sun dried tomatoes DIMITRA

  • 2 eggs

  • 2 large onions

  • 2 cups bread crumbs

  • 100 g. Gruyere

  • olive oil for frying

Directions

  • Grate the onions, the tomatoes and the cheese in the grater.
  • Mix the aubergine pulp with the onion, cheese, eggs and the cake (not the whole cake at once. You may need it).
  • Knead the mixture and shape meatballs.
  • Fry them in hot olive oil.
  • Enjoy!
